Today’s Feature: Home Grown Lettuce and Basil

Today's Feature Maschio's Salads with lettuce and basil grown by our VISTA students  

ROXBURY, NJ (April 17, 2019) – Roxbury Township Public School’s food service provider, Maschio’s, featured salads on Tuesday utilizing fresh lettuce and basil from the culinary hydroponic gardens at Roxbury High School. 

Chef Nick Hamadyk used the lettuce grown by the VISTA students for these featured salads and garnished them with fresh basil, also grown by the students. 

Chef Nick shared his gratitude by saying, “Thank you to the teachers, staff, and students that make this happen. Looking forward to future collaboration.” 

Homegrown lettuce at Roxbury High School Roxbury’s Director of Special Services, Amy Gallagher agreed, “It is so wonderful to see this collaboration come to fruition and how this will benefit our schools. The salads looked delicious.” 

Denise Glenn, Roxbury’s Science Supervisor for grades 6-12, added, “Thank you, Chef Nick, for featuring our greens! We are literally having our first farm (aero/hydroponic) to table experience at RHS. Kudos to our “Seeds Kids” in VISTA and all their hard work.” 

The culinary arts classes at the high school also took advantage of the tower gardens by harvesting basil last week to include in their recipes. 

The VISTA program at Roxbury High School is designed for students who have multiple disabilities, including those students with physical and cognitive impairments. The VISTA program offers a home base classroom that provides a calm, slower pace for students to receive their academic instruction. Emphasis is placed on functional academics and social skills that are unique to the students' individual needs. The VISTA home base includes a classroom area for direct instruction as well as a kitchen area where students receive and practice functional life skills. A therapy area including occupational therapy and physical therapy equipment is available in the classroom environment. Being located in a public school setting, VISTA students are able to take advantage of a wide range of social and academic opportunities available outside of the classroom to the maximum extent possible. The VISTA program emphasizes transition planning and activities through age 21, including access to a transition coordinator, job coach, and a Structured Learning Experience (SLE) teacher.
